<li class="dF3vjf" data-sfc-cb="" data-hveid="CAQQAA" data-processed="true"><span class="T286Pc" data-sfc-cp="" data-sfc-cb="" data-processed="true"><b>Kvalitný pákový kávovar a&nbsp;najmä dobrý mlynček na&nbsp;kávu. </b></span>Espresso vyžaduje veľmi jemné mletie. Mlynček s&nbsp;kvalitnými oceľovými mlecími kameňmi je základ, bez&nbsp;ktorého sa nikam nedostaneš.</li>
<li class="dF3vjf" data-sfc-cb="" data-hveid="CAQQAA" data-processed="true"><span class="T286Pc" data-sfc-cp="" data-sfc-cb="" data-processed="true"><b>Čerstvú zrnkovú výberovú kávu.</b></span><span class="T286Pc" data-sfc-cp="" data-sfc-cb="" data-processed="true"> Najlepšie do&nbsp;4 týždňov od&nbsp;praženia. Dátum praženia musí byť napísaný na&nbsp;obale. Pre&nbsp;espresso sú najmä na&nbsp;začiatok vhodné blendy s&nbsp;Robustou.</span></li>
<li class="dF3vjf" data-sfc-cb="" data-hveid="CAQQAA" data-processed="true"><strong class="Yjhzub" data-sfc-cb="" data-processed="true"><span data-wiz-uids="pRuoHd_16" data-sfc-cb="" data-processed="true">Tamper. </span></strong>Utláčadlo na&nbsp;rovnomerné utlačenie pomletej kávy.</li>
<li class="dF3vjf" data-sfc-cb="" data-hveid="CAQQCA" data-processed="true"><span class="T286Pc" data-sfc-cp="" data-sfc-cb="" data-processed="true"><span class="T286Pc" data-sfc-cp="" data-sfc-cb="" data-processed="true"><strong class="Yjhzub" data-sfc-cb="" data-processed="true"><span data-wiz-uids="pRuoHd_1b" data-sfc-cb="" data-processed="true">Baristickú presnú váhu. </span></strong>Na presné meranie vstupnej kávy &#8211;&nbsp;zrna a&nbsp;výstupnej kávy &#8211;&nbsp;espressa.</span></span><br />
<h2 class="otQkpb" role="heading" aria-level="3" data-processed="true">Krok za&nbsp;krokom sa posúvame k&nbsp;dokonalosti prípravy espressa doma:</h2>

<li class="dF3vjf" data-sfc-cb="" data-hveid="CAUQAA" data-processed="true"><span class="T286Pc" data-sfc-cp="" data-sfc-cb="" data-processed="true"><strong class="Yjhzub" data-sfc-cb="" data-processed="true">Nahriatie pákového kávovaru a&nbsp;páky:</strong> Zapni pákový kávovar aspoň 15-20 minút vopred. Nahriata páka (portafilter) musí byť &#8220;zamknutá&#8221;, založená v&nbsp;hlave kávovaru, aby&nbsp;sa poriadne od&nbsp;kávovaru nahriala. Ak&nbsp;budeš mať studenú páku, stratíš teplotu. Darmo si kávovar nahrieval.</span></li>
<li class="dF3vjf" data-sfc-cb="" data-hveid="CAUQAA" data-processed="true"><span class="T286Pc" data-sfc-cp="" data-sfc-cb="" data-processed="true"><strong>Mletie a&nbsp;dávkovanie:</strong> Pomeľ</span> kávu najemno (ako hladká múka). Porcia pomletej kávy závisí od&nbsp;<strong>veľkosti sitka</strong>, ktoré máš v&nbsp;páke. Nemôžeš dať menej alebo&nbsp;viac. Ideálne je pracovať so&nbsp;sitkom na&nbsp;dvojité espresso &#8211;&nbsp;doubleshot a&nbsp;pákou, ktorá má dve výpuste. Sitko musí mať rovné dno. Väčšinou robíme doubleshoty z<strong> 16g &#8211;&nbsp;18g</strong></li>
<li data-sfc-cb="" data-hveid="CAUQAA" data-processed="true"><strong>Utláčanie pomletej kávy v&nbsp;páke</strong><span class="T286Pc" data-sfc-cp="" data-sfc-cb="" data-processed="true"><strong class="Yjhzub" data-sfc-cb="" data-processed="true">:</strong> Kávu v&nbsp;páke rovnomerne rozlož a&nbsp;utlač silno. Teraz je dôležité najmä to, aby&nbsp;si ju utlačil/a vodorovne a&nbsp;najmä vždy ju utlač <strong>rovnakou silou.</strong></span></li>
<li class="dF3vjf" data-sfc-cb="" data-hveid="CAUQBg" data-processed="true"><span class="T286Pc" data-sfc-cp="" data-sfc-cb="" data-processed="true"><strong class="Yjhzub" data-sfc-cb="" data-processed="true">Extrakcia:</strong> Založ správne páku do&nbsp;kávovarua okamžite spusti vodu. Sleduj prísnym okom prúdik! Musí vytekať veľmi pomaličky, ale&nbsp;nesmie kvapkať. Musí pripomínať <strong>myšací chvostík. </strong>Prúdik sa musí tak&#8221;zalomiť&#8221;&nbsp;smerom dovnútra, keď&nbsp;opúšťa obe výpuste páky. A&nbsp;musí vytekať z&nbsp;oboch výpustí presne naraz a&nbsp;rovnako. Espresso sa musí ligotať a&nbsp;byť husté sirupové. Ideálny čas extrakcie je 25 sekúnd. Všímaj si ako sa prúdiť časom mení: bledne, stráca telo aj&nbsp;oleje. Buď nekompromisný/á:)</span></li>

Ak&nbsp;je stará a&nbsp;&#8220;vyprchala&#8221;, nedosiahneš sirupový ligotavý prúdik.</span></li>
<li class="dF3vjf" data-sfc-cb="" data-hveid="CAYQAQ" data-processed="true"><span class="T286Pc" data-sfc-cp="" data-sfc-cb="" data-processed="true"><strong class="Yjhzub" data-sfc-cb="" data-processed="true">Nesprávne mletie:</strong> Ak&nbsp;tečie espresso z&nbsp;výpustí páky príliš rýchlo, namlel/a si  nahrubo. Ak&nbsp;kvapká, buď je  príliš jemná alebo&nbsp;si to prehnal/a s&nbsp;utlačením.</span></li>

<p>Ono takto, nie je úplne &#8220;zlatá&#8221;&nbsp;&#8211;  tá farba je skôr taká piesková ako dubajské duny:)</p>
<p>A tak je to dobre: toto farebné prevedenie je ozaj decentné, nemajte obavy, že&nbsp;by tá kapotáž bola veľmi okázalá.</p>
<p>Výborne dizajnéri zvolili aj&nbsp;svetlejšie drevené doplnky, ktoré ladia s&nbsp;touto pieskovou farbou.</p>

Samozrejme tá aróma nepripomína v&nbsp;ničom arómu kávy, ale&nbsp;už teraz vieme povedať, že&nbsp;toto zelené zrno vonia krajšie ako tá Sidamo, ktorú sme pražili pred&nbsp;tým. /Pozri staršie blogy na&nbsp;tomto journale</p>
<p>Braňo upozornil, že&nbsp;táto Guji je veľmi čerstvá a&nbsp;zdôraznil, že&nbsp;pri&nbsp;výbere kvalitného zeleného zrna je pre&nbsp;pražiara kľúčový stupeň vlhkosti zrna.</p>
<p>Čerstvosť zeleného zrna a&nbsp;stupeň jeho vlhkosti spolu samozrejme úzko súvisia.</p>
<p>Preto sa snažíme kupovať buď veľmi čerstvé zrno alebo&nbsp;aspoň z&nbsp;takého skladu, ktorý je špeciálne klimatizovaný / čakaj výššiu cenu.</p>
<p>Pražíme na&nbsp;mini domácej pražičke JANO &#8211;&nbsp;50g zeleného zrna.</p>
<p>Začíname na&nbsp;180 stupňoch a&nbsp;po&nbsp;chvíli ucítime opäť novú vôňu, akú sme nepocítili pri&nbsp;tej Sidamke.</p>
<p>Zrnká veselo nadskakujú a&nbsp;pomaly žltnú a&nbsp;hnednú.</p>
<p>Aróma sa mení každú chvíľu a&nbsp;až tesne pri&nbsp;konci začne pripomínať &#8220;kávovú&#8221;&nbsp;arómu.</p>
<p>Necháme 5 min a&nbsp;dáme cooling.</p>
<p>Necháme JANA vychladnúť a&nbsp;začneme druhé kolo na&nbsp;190 stupňoch Celzia.</p>
<p>Pri tretej min. zreteľne počujeme takých 10 pukov &#8211;&nbsp;crackov.</p>
<p>Počkáme teda ešte 20 sek. a&nbsp;prepíname do&nbsp;cooling fázy.</p>
